Cuisine is the method of cooking of a particular country and region. In today’s world nearly every country has got their own cuisines be it India, China or any other country. Either the method came from their ancestors or it was taken from different country, For example pizza is an Italian cuisine but it also comes in American cuisine. Here I will talk about a few cuisines from different countries and their history.
Chinese cuisine
When it comes to cuisine the first one which generally comes to our mind is Chinese, I mean we all have got a few must-order dish in Chinese cuisine. But now a days all Chinese cuisines taste the same because it’s all covered in a sauce laden with too much soy sauce. In actual it has a tremendous range of flavours, the traditional Chinese cuisines were much lighter and healthy. During Han dynasty, noodles were invented. During Song dynasty, the rich used to choose food from a menu it was not even there in Europe that time. But to satisfy the taste of various people the taste of Chinese food have been changed. One which used to be healthy now has become unhealthy.
Japanese cuisine
Japanese cuisine, the famous sushi came from this but in the original form sushi was made to preserve fishes for years. Japan is surrounded by water and this explains the use of fish in their cuisines. Beef, for which Japanese crazy now but it only came about two centuries ago. The soy sauce which is used a lot in Japanese restaurants came from China, but they have perfected it. In Japanese cuisine rice is used a lot but only thing which differentiate their use of rice with others is, The respect afforded to rice is so great that it is not flavoured or seasoned with spices or sauces, it is always white and boiled. Other foods may be added on top of rice, but the rice should be pure and bland to start with. This is a kind of respect for the natural flavour and aroma that the rice has on its own, as nature made it. Japanese is influenced from the cuisines of other countries.
Italian cuisine
Italian cuisine is a combination of exquisite aromas, and the main vegetables used are corn and tomato which have been used since 1700. The misconception about Italian cuisine is that it mainly gives pasta, pizzas. But it is not at all true. Archestratus, a poet, an author of cookbook first gave the world Italian food, he even wrote a poem to explain Italian cuisine. In any Italian restaurant, the food must contain a glass of high class wine, this has come from their ancestors. There are over 10,000 types of sauces in Italy and over 450 types of paste. An average Italian consumes 23kg of pasta per year in comparison an European consumes only 6 pounds, in 1930 the government banned pasta but they had to cancel it quickly. They also loves ice-cream, rice and jelly, there is a university in Bologna where people learn cooking jelly.
British cuisine
Great Britain, it consists of three countries with rich history and culture i.e. Scotland, Wales and England, their history has lot of influence on their culture and food too. Like the romans brought cherry, corn, cabbage and peas. The Vikings taught them the technique of smoking and dry fish. When Normans invaded they brought culture of drinking wine and gave them words for common food like beef and mutton. East India Company brought them Khichri, an Indian dish which have been a major part of their breakfast. The British curry resembles a lot to Indian curry. The British cuisine consists of dishes from Chinese, Indian, French, American and other cuisine.
Korean cuisine
For Korean people, growing, harvesting, preparing and eating have been a social event. The variety and quality differs from a farmer to royal people. Rice, vegetables, noodles and tofu have been the key ingredients in their food. Sesame oil, doenjang (paste), soy sauce, salt, garlic, ginger and gochujang (red chili paste) usually season Korean food. Before refrigeration, Koreans stored kimchi and other pickled vegetables preserved in big ceramic containers stored underground in outdoor courtyards during winter. That method continues in some rural areas of South Korea. They are influenced by cuisine from china, japan as they all are neighbours. Korean table manners are mainly to show respect to elders. The Korean cuisine does not use oil much, they are even referred as one of the healthiest cuisine around the globe.
